toasted oat & nut granola recipe

This has been one of my favorite breakfasts.

I discovered this granola recipe a few years ago in the book The Nordic Way written by Arne Astrup, Jennie Brand-Miller, and Christian Bitz and have been making it ever since.

I tweaked the recipe a little bit, which I will describe more below. I usually eat it with milk or plain yogurt for a breakfast or snack, or use it to top ice cream for a delicious dessert.

INGREDIENTS

almonds, 1 cup

hazelnuts, 1 cup

pumpkin seeds, 1/2 cup

sunflower seeds, 1/2 cup

rolled oats, 1 and 1/3 cup

honey or maple syrup, 1/2 cup

chia seeds, 3 tablespoons

chopped dark chocolate (or chocolate chips), 1 cup

1 | First, place parchment paper on baking sheet pan and preheat oven to 425 degrees F.

2 | Mix together the almonds, hazelnuts, pumpkin seeds, sunflower seeds, and rolled oats. Place on baking sheet and bake for 10 minutes in preheated oven.

3 | When it is done baking, remove from oven. Pour the honey (or maple syrup) over the toasted nuts, seeds & oats. Also add the chia seeds. Mix together with a spoon.

4 | This next step is VERY IMPORTANT: you can either wait for the mixture to cool completely before you add the chocolate OR you can add the chocolate while the mixture is still warm. The difference is that if you do the first option, the chocolate will stay in larger chunks, but if you do the second option, the chocolate will melt and become a delicious chocolate-covered granola. I prefer letting the chocolate melt, but sometimes I like to have the larger chunks of chocolate too. Your preference :)

5 | After that, you’re pretty much done! After it cools completely, you can store it in jars or an airtight container. And when you need a crunchy snack or breakfast idea, you now have some delicious granola in your pantry.
